MUSCAT WINE SPARKLING WHITE BÉGAMO

 

Tasting notes : The Moscato Giallo Sparkling White Wine is produced with Moscato Giallo grapes using the Asti method. It is a sweet, intensely aromatic, light and refined sparkling wine.

Color: It has a light yellowish-green color.

Perlage: Fine, intense, and persistent bubbles.

Aroma: Intense, fresh aroma of flowers and tropical fruits, characteristic of aromatic Muscat grapes.

Aroma Descriptors:

Melon, Honey, White Flowers, Citrus, Baked Sweet Potato, Ripe Apple, Passion Fruit, Peach

Flavor: Sweet on the palate, with a refreshing finish.

Harvest: The grapes were hand-picked in 20kg boxes from our own vineyards located in the Vale dos Vinhedos.

Cold Maceration/Pressing: Immediately after harvesting, the grapes go directly to the press, where the must remains in contact with the skins for approximately 3 hours. This is followed by pneumatic pressing.

Decantation of the Wort: After pressing, the wort is decanted at a cold temperature of 14ºC.

Alcoholic Fermentation/Foam Production (Pressure): The decanted must is placed in autoclaves to begin alcoholic fermentation. When the must reaches an alcohol content of 6.5%, the autoclave is completely closed and the foam production process begins, that is, the moment when carbon dioxide dissolves in the liquid, increasing the pressure to 6 atmospheres. When the autoclave reaches 6 atmospheres of pressure, the alcohol content reaches approximately 7.2%, and the cooling process begins down to -3ºC, which immediately stops fermentation and leaves a residual sugar content of around 70g/l.

Tartaric Precipitation: The autoclave is kept at a temperature of -3ºC for 8 days to precipitate the tartaric salts. Immediately afterwards, it is filtered and bottled at -2ºC.

Isobaric Bottling: The Moscatel is bottled at -2ºC under pressure (isobaric) in a special machine, and then the cork stopper, metal cage, and label are applied. It goes to market immediately without any aging.

Residual sugar : 75.0 grams per liter.

Alcohol : 7.5% Vol.

Serving: The ideal serving temperature for Sparkling Moscato is between 4 and 6ºC.

Pairing : Fresh fruits: strawberries, grapes, star fruit, pomegranate, pineapple, pitanga, etc. Fruit soup, fruit salad with plenty of orange and mint leaves. Meringues, kiwi, lemon tarts, citrus fruit sorbets, as well as lemon jellies and soufflé are excellent suggestions for accompaniments.
