Production Region: Vale dos Vinhedos – Bento Gonçalves

 

Composition: 100% Merlot grapes.

 

Vineyard: Owned, cultivated with certified seedlings, trellis system, with a maximum production of 8 tons/ha. Phenolic maturation is controlled to obtain the highest sugar content with soft and ripe tannins.


Climatic Characteristics: Cold winters , hot summers with cool nights. Good temperature differences between day and night gave this great 2020 vintage a structured and complex wine.

 

Winemaking: This wine is made with selected grapes. After destemming, selected yeast was added to initiate fermentation. During fermentation, pump-overs were performed gently and consistently. Skin separation was carried out after a week of maceration, when tannins and anthocyanins were already present in the wine. It was then left on its lees for a month to achieve greater complexity, and it is during this time that malolactic fermentation takes place.

Once malolactic fermentation was complete, the wine matured its tannins in oak barrels. Afterward, the wine was bottled, where it continues to evolve, developing an elegant bouquet.

Organoleptic Characteristics:

 

Appearance: Wine with a beautiful purplish-red color.


Aroma: Intense and complex at first with notes of red fruits, cherry, plums and blackcurrant, and then the aromas evolve into chocolate, cocoa, coffee, light smokiness and spices.


Palate: Structured, presenting mild, ripe tannins, with a persistent and pleasant finish. A long-lasting, memorable, elegant, full-bodied, and harmonious wine.

 

Aging: In French and American oak barrels for 12 months. After that, it remains in the cellars for at least 6 months before being released for sale.

Estimated aging potential: This great vintage can be stored for 8 to 10 years after bottling if kept horizontally, away from light and at a temperature between 14 and 16 ° C.

 

Pairing: Goes well with medium-bodied dishes such as pasta in general, Roman-style and Bolognese sauce, pizzas, lightly seasoned meats such as grilled meats, veal, lamb and chicken, and fondues. Also good with Parmesan and Milanese-style fillets, seasoned risottos. Semi-cured cheeses (Camembert, Brie, Gouda, Gruyère).


Serving: Reveals its best characteristics between 15 and 18°C. Decanter use is recommended after 2 years in the bottle.
