Fine dry red wine Pinot Noir

 

Production Region: Vale dos Vinhedos – Bento Gonçalves - RS

Grape Composition: 100% Pinot Noir.

Vineyard : Own vineyards, cultivated with selected seedlings with a production of 7 tons/ha.

Controlling phenolic maturation to obtain the maximum content of ripe sugars and tannins.

 

Harvest/Winemaking: The harvest was done manually in early March, in small boxes with a capacity of 17 kg. Careful and delicate destemming to remove the stems without breaking them or tearing the skins. Traditional fermentation, with pump-overs four times a day and maceration for one week.

After the completion of this alcoholic fermentation, the wine was transferred to another tank and kept for 30 days on the fine lees, favoring malolactic fermentation.

Finally, the wine was destined for aging. Before bottling, it underwent a light filtration to maintain the wine's characteristics as much as possible.

 

Tasting

Appearance : Wine with a light red color.

Aroma and taste : Aromas of blackberries, cherries, raspberries, flowers and herbs. The moderate oak adds a very elegant touch without interfering with the characteristics of the variety. It is an elegant, delicate, medium-bodied wine with pleasant, velvety and silky tannins, easy to drink.

Aging: Aged in French oak barrels for 5 months. After bottling, it remained maturing in the cellars for 3 months before being released for sale.

Estimated Storage Time: We suggest a maximum of 2 to 4 years if stored in a climate-controlled cellar with a constant temperature of 14º to 16º Celsius.

Food and Wine Pairing Guidelines: Risotto with mushrooms, lean red meats, white cheeses, fish, especially salmon, and light soups.

Serving temperature : Between 16 and 18°C. Decanting is recommended after 2 years in the bottle.
