Production Region: Vale dos Vinhedos – Bento Gonçalves - RS

 

Grape Composition: 100% Cabernet Sauvignon Grapes

 

Vineyard : Own vineyards, cultivated with selected seedlings producing 8 tons/ha. Control of phenolic maturation aiming to obtain the maximum content of sugars and ripe tannins.

 

Harvest/Winemaking: The harvest was done manually in mid-March due to the dry climate of this Great Vintage of Vintages. Careful and delicate destemming to remove the stems without breaking them or tearing the skins. Traditional fermentation and maceration for one week.

After the completion of this alcoholic fermentation, the wine was transferred to another tank and kept for 30 days on the fine lees where malolactic fermentation took place.

Finally, the wine was left in the tanks to mature.

 

Tasting

 

Appearance : Wine with an intense, bright violet color, purplish edges, and great aging potential.

Aroma and taste : Complex, ripe aromas reminiscent of red fruits such as blackcurrant, cocoa, dried ripe figs, toasted almonds, coffee, and a touch of vanilla from aging in oak barrels.

Palate : It is dense, full-bodied, structured, presenting velvety tannins, revealing the perfect phenolic maturation of the grapes in harmony.

 

Aging: Aged in French oak barrels for 12 months. After bottling, it remained maturing in the cellars for 8 to 10 months before being released for sale.

 

Estimated Aging Potential: Being a well-structured wine from an excellent vintage, it can be safely stored for 8 to 10 years after bottling, if kept in a climate-controlled cellar with a constant temperature of 14º to 16º Celsius.

 

Food and Wine Pairing Guidelines : Pairs well with hearty dishes such as game meats, lamb, wild boar, quail, etc. Beef, such as barbecue or in preparations with rich and complex sauces. Cod and pasta with strong sauces. Cured meats in general and aged cheeses, such as Parmesan, goat cheese, and cured Minas cheese.

 

Serving Temperature : Reveals its best characteristics between 16 and 18°C. Decanter use is recommended after 2 years in the bottle.
