Fine dry red wine Tannat Bergamo
Production Region: Vale dos Vinhedos – Bento Gonçalves - RS
Grape Composition: 100% Tannat.
Vineyard : Own vineyards, cultivated with selected seedlings with a production of 7 tons/ha.
Controlling phenolic maturation to obtain the maximum content of ripe sugars and tannins.
Harvest/Winemaking: The harvest was done manually in early March, in small boxes with a capacity of 17kg. Careful and delicate destemming to remove the stems without breaking them or tearing the skins. Traditional fermentation, with pump-overs four times a day and maceration for one week.
After the completion of this alcoholic fermentation, the wine was transferred to another tank and kept for 30 days on the fine lees where malolactic fermentation took place.
Finally, the wine was sent for aging. Before bottling, it underwent a light filtration to maintain the wine's characteristics as much as possible.
Tasting
Appearance : Wine with an intense and deep ruby color, with violet hues, and high aging potential.
Aroma and taste : With aromatic complexity provided by the wood, it reveals notes of smoke, leather, vanilla, toast, combined with red fruits such as blackcurrant and raspberry.
Palate : A full-bodied wine, presenting very powerful but pleasant tannins with a long finish, revealing the perfect phenolic maturation of the grapes.
Aging: In French and American oak barrels for 12 months. After bottling, it remained maturing in the cellars for 8 to 10 months.
Estimated aging potential: It can last for 4 to 7 years after bottling if stored in a climate-controlled cellar with a constant temperature of 14º to 16º Celsius.
Food Pairing Guidelines: Pairs well with dishes such as lamb, red meats with stronger seasonings, cod, and aged hard cheeses like Parmesan, goat cheese, and cured Minas cheese.
Serving temperature : Between 16 and 18°C. Decanting is recommended after 2 years in the bottle.
