Production Region: Vale dos Vinhedos – Bento Gonçalves - RS

 

Grape Composition: 100% Cabernet Sauvignon

 

Vineyard : Own vineyards, cultivated with selected seedlings with a production of 8 tons/ha.

Controlling phenolic maturation to obtain the maximum content of ripe sugars and tannins.

 

Harvest/Winemaking: The harvest was done manually in early March, in small boxes with a capacity of 17kg. Careful and delicate destemming to remove the stems without breaking them or tearing the skins. Traditional fermentation, with pump-overs four times a day and maceration for one week.

After the completion of this alcoholic fermentation, the wine was transferred to another tank and kept for 30 days on the fine lees where malolactic fermentation took place.

Finally, the wine was sent for aging. Before bottling, it underwent a light filtration to maintain the wine's characteristics as much as possible.

 

Tasting


Appearance : Wine with an intense ruby-violet color and purplish edges, with aging potential.

 

Aroma and taste : Ripe aromas reminiscent of blackberries, blackcurrants, dried ripe figs, toasted almonds, coffee, and a touch of vanilla from aging in oak barrels.

 

Palate : It is dense, full-bodied, structured, presenting pleasant tannins, revealing the perfect phenolic maturation of the grapes in harmony.

 

Aging: In French oak barrels for 12 months. After bottling, it remained maturing in the cellars for 8 to 10 months.

 

Estimated Storage Time: We suggest a maximum of 4 to 5 years after bottling, i.e., if stored in a climate-controlled cellar with a constant temperature of 14º to 16º Celsius.

 

Food Pairing Guidelines: Pairs well with hearty dishes such as game meats, lamb, wild boar, quail, etc. Beef, such as barbecue or in preparations with structured and complex sauces with aromatic herbs and spices. Cod and pasta with strong sauces.

Cured meats in general and hard, aged cheeses, such as Parmesan, goat cheese, and aged Minas cheese.

Serving temperature : Between 16 and 18°C. Decanting is recommended after 2 years in the bottle.
